Job Description:
Marriott International invites experienced culinary
professionals to apply for the role of Head Garde Manger. As part
of our esteemed culinary team, you will lead the cold kitchen
operations at one of our vibrant properties. This role is crucial
in maintaining Marriott’s reputation for innovative service and
quality hospitality, overseeing the preparation of salads,
appetizers, dressings, and other cold dishes while ensuring the
highest standards of food safety and presentation are met. Manage
and oversee all aspects of the cold kitchen department, ensuring
excellence in the creation and presentation of a diverse array of
cold dishes. Lead, train, and mentor kitchen staff in culinary
techniques and Marriott’s standards of service and quality.
Maintain inventory levels and conduct ordering of supplies and
ingredients while managing costs. Ensure strict adherence to health
and safety standards. Collaborate with other kitchen and restaurant
staff to deliver outstanding guest dining experiences. Develop and
update menus in collaboration with other chefs and the management
team, incorporating seasonal ingredients and modern culinary
trends. Expertise in food preparation and presentation,
specifically in cold dishes Strong leadership and personnel
management skills Excellent communication and organizational
abilities Ability to work in a fast-paced and high-pressure
environment Proficient in inventory management and cost control
In-depth knowledge of health and hygiene regulations ServSafe Food
Handler certification Professional culinary certification (e.g.,
ACF Certified Culinarian)
